Rosé All the Way, and All the Way Home

The wineries day has been on your list for a few summers now. It comes up at every birthday dinner, collects a wave of very enthusiastic yeses, then sinks quietly back under everyone's calendars. Rosé All The Way is where it finally gets poured: a winery tour in the hills with pick up and drop off, a long lunch in wine country, your own chic Gold Coast apartment, then dinner at our waterfront spot as the day winds down. A whole day of being driven through beautiful country with the women who've been there for every phase of your wine opinions isn't a frivolous thing to want. Girlhood never came with a use by date, and neither did this wineries day.

Somehow you got every diary to agree on a date, and now the whole group's climbing aboard at the kerb, which is the best place for a wine tour to start. The ride's air conditioned and a professional host is looking after the day, so not one of you is driving or navigating. As the coast falls behind and the road climbs up into the green, the chat that's lived in voice notes for months finally gets to happen out loud.

Then come the cellar doors. There are two beautiful wineries with tastings at each, glasses lined up along the tasting bar while the group develops some very confident opinions. The tasting notes start out respectable (a hint of stone fruit, something about the finish) and get less technical with every pour, until someone describes a rosé as 'tastes like a holiday' and it's adopted as the official review. A cheese platter lands within easy reach, the kind everyone picks at between sips and stories.

Then everyone settles around the table properly for a two course lunch, plates arriving course by course and slowing the group down just enough to notice where you are: rolling vineyards, hillside cellar doors, long tables in the sun and arms slung round shoulders. Whatever each of you is pouring, rosé or otherwise, nobody's watching the clock.

Your host brings the group back down from the hills, and the conversation follows everyone straight into your own chic Gold Coast apartment. Bags down and the couch claimed in one long sprawl, the playlist goes on while the day gets its first retelling. Then the living room turns into a tasting room of a different kind, with the good mirror shared in shifts and every outfit held up for notes from the couch: bold, crisp, a bit much, pairs beautifully with those earrings. Somewhere between the second outfit and the last swipe of lip gloss, the wine tour crew has become the dinner crew.

Now it's time to take the day down to the water. Our waterfront spot is bright and breezy, the water turning dark and glossy outside as the lights come on. Your table's reserved, a round of bubbly lands for one more toast to the hills, and the tapas style share plates start travelling the length of the table, generous and made for passing. The day's stories get told a second time, each one a little grander than the first.

Later it all winds back to the couch for the debrief, where the official ranking of the wineries changes at least twice. The coffee at the kitchen bench is the first thing all weekend nobody writes a tasting note for, and the note on the weekend itself is unanimous: dangerously easy to drink.

My Ultimate has been creating unforgettable girls weekends since 2011, so we know a thing or two about bringing the girls together. The kerbside pick up with nobody driving, the tasting notes that got sillier with every pour, the outfit reviews from the couch and the long table by the water. It's the kind of trip that starts with a wineries day that kept getting postponed and ends with the group already arguing about which hills to do next.
